Dark Chocolate Holiday Mousse

For Christmas as a child, I remember my Mom would make this delectable mousse. It was a real treat as we only got it once a year. Now I'm sharing it with you; I hope you enjoy.

You will need:

8 Eggs (room temperature)
12 oz of Bakers Semi Sweet squares
10 TBLSP unsweetened butter
1/4 Cup Brandy (Optional)

A wire whisk
A few spoons
1 small bowl
1 large bowl
Hand Mixer or Kitchen Aid Mixer

1 - Separate eggs putting yolks in a small bowl and whites in a large bowl.
2 - Melt chocolate and butter very slowly.
3 - With a wooden spoon (or your favorite spoon) beat in the yolks 1 at a time. Make sure they're mixed in well. Let cool for 4-10 minutes.
4 - OPTIONAL: stir in brandy.
5 - Take whites in large bowl and with either a hand mixer or a Kitchen Aid mixer, beat eggs until stiff. (You will know they're ready when they form stiff peaks).
6 - Once whites are ready, take a wire whisk and gently fold the chocolate into the egg whites. Combine thoroughly  making sure there are no white streaks.
7 - Gently spoon into a bowl or tin; Chill several hours before serving.
